The beer has 45 IBUS and is brewed with centennial, amarillo, columbus, cascade and simcoe and intensively dry-hopped with centennial and amarillo. The backbone is provided by 8 different types of speciality malts with only 87 kilos of malt used in a 20HL batch (our Punk IPA uses 450 kilos in 20HL). -

German style hefeweizen, cloudy in appearance, aromatic and highly carbonated. Lightly hopped with our own Tettnanger hop flowers. Notice the “banana” aromas, created by the special type of yeast used and the higher fermentation temperatures. This is balanced by a tart finish on the palate which is caused by the high percentage of wheat malt in the grain bill. Pour with a creamy, white head to appreciate the aromatics of the beer. -

Gold is a medium strength Australian Wild Ale best enjoyed in good company. Delicately balanced, gold shows notes of pepper, fresh hops, lemon zest and stone fruits. The palate is effervescent and bone dry with a subtle spicy bitterness, pillowy body and developing acidity from the indigenous flora. This beer undergoes a warm primary fermentation in wide vats before being transferred into French oak barrels for maturation. Barrels are then selected and blended to meet our desired character before being packaged and naturally bottle conditioned for a minimum of 12 weeks for ideal carbonation. A 50/50 blend of barrel aged Gold with fresh Gold that has just completed primary fermentation. This composition of aged and fresh beer is what we had originally intended for our Gold. It didn't end up like that though, as Gold is 100% barrel aged. We love the fresh fermentation esters and bright hop character we get in our young fermentations. This is what we focus on in beers like The International & As It Were (coming in November). But we can't hide that we also love the apparent funk, creamy mouthfeel and complex fermentation flavours of aged beer. We dont think of this blend as being a best of both worlds, but more an attempt (and this is only the first one) to marry these flavours harmoniously. One of the beers that really got me thinking about making mixed culture beers at all was BFM √225. It was the first biere de coupage I tasted and still remains a little bit of a mountain for me. SLIP, SLOP, SLAP was brewed with malted barley, wheat and rye, we hopped it with German Huell Melon across the boil and in whirlpool to 30 IBU before barrel fermenting it and dry-hopping in barrel three seperate times during that fermentation. After a monthlong fermentation, we packaged it without a post-ferment dry hop in green bottles and allowed it to condition for three months as we do for all our more primary beers. The results are a little surprising… SSS pours quite hazy… it has bright aromatics of orange soda, pepper and dried herbs without any signs of oxidation. The palate is full of juicy orange citrus. Solera is a 30% NSW raw spelt beer fermented with our house culture and aged in foudre. It’s recipe is similar to our Gold except raw wheat is exchanged for raw spelt. We will be taking successive pulls of this large barrel and are excited to watch the development of these pulls as the beer inside continually and eventually blends itself. Because we get less a chance to intervene and blend ourselves, Solera appears more tart than our Gold and Amber blends and has a distinctly unique body. -

Amager Bryghus has come a long way since our start in 2007, and along this way we have met and worked with a lot of great people. Two of those we would like to pay homage to by re-brewing a beer we originally did with them back in 2012. Mike Murphy and Shaun Hill were then both brewers in Copenhagen, and as we are indeed very much inspired by modern American craft brewing it was meant to happen that we would become friends and hang out at each other’s breweries. At such a get-together we came up with the recipe for our Imperial Rye Porter (Rugporter), a beer we still brew occasionally. And a beer we found fitting to put on Bourbon barrels back them. Imperial stout aged in bordeaux red wine barrels. When Anne Peabody was adopted from the orphanage in 1872, by a white, Christian family in the Wyoming small-town of Meeteetse, it wasn’t exactly written in the stars that years later she would end up a burlesque star in Paris. Many small-town folks whispered about how her jet black hair clearly indicated native blood, but Anne’s parents turned a deaf ear to such talk. Unfortunately for the Peabodys, Anne also turned a deaf ear to the gospel that her parents so eagerly tried to teach her. Although a respectful child, Anne simply couldn’t keep her mind on all that Jesus mumbo-jumbo. She wandered off. In the beginning for hours, but as she grew older she’d stay out in the wilderness for days. Persistent rumors claimed she had been seen talking to wild buffalo on the plains. Her parents had long stopped being surprised. So when Anne disappeared for good one day, it somehow came expected. Under her bed her parents found a newspaper clipping about a so-called Wild West Show in nearby Casper, but when they got there Anne had already moved on with her new boss Buffalo Bill. Her abilities as a buffalo whisper combined with a distinct star quality made her the jewel of the show. Old Peculier is possibly one of the country’s most well-known and loved ales. This unique, beautiful brew is often imitated but never matched and is sold literally all over the world. With countless awards to its credit, it is something of which every Briton can be very proud and is the epitome of the greatest of British brewing tradition. In the early years of the modern brewing era, about two hundred years ago, many brewers produced a dark, strong ‘stock’ beer in the winter months, to provide a base amount of fermented beer to add to beers brewed in the rather more volatile months of the summer. Old Peculier probably owes its origins to this. For this speciality, we use old and young lambic beer that has aged in our oak casks. When the lambic is 6 months old, we add 25% black cherries. This provokes the second fermentation. 3 Fonteinen Framboos is the result of macerating hand-picked whole raspberries on young lambic for at least four months, in a proportion of one kilogram of fruit per litre of lambic. The raspberry lambic is then blended again with more young lambic to obtain a minimum intensity of 35% fruit, and is bottled immediately afterwards. These bottles are then stored in our cellars for at least five months so that the raspberry lambic can develop into a beautiful, traditional, and re ned Framboos. With a abundant forest fruit nose as it warms in the glass, 3 Fonteinen Framboos will age perfectly but may lose some of the vibrant colours and forest fruit aromas. This un ltered and unpasteurised lambic is all-natural with no arti cial juices, syrups, or sugars added. Breaking the mold among existing beer styles, Lindemans developed the botanical lambics, a collection of old gueuzes with a twist. Formerly known as Liefmans Kriek and Cuvée - Brut. This classy beer represents the perfect marriage between the fresh accents and slightly acidic flavour of the black cherries. Liefmans Kriek-Brut is a mixed fermentation beer, with every hectolitre containing up to 13 kilos of fruit! Liefmans Kriek-Brut is a perfect blend of Oud Bruin and Goudenband from different vintages, and can consist of between 15 and 20 different batches of beers. The beer is matured for 18 months, bringing out the very best of its intense flavour. Liefmans Kriek-Brut is a deep reddish-brown colour, with a pale head and wood and almond notes. On the palette, you can clearly taste the slightly sweet, yet at the same time gently bitter fruit flavours.
